How to make Harees

  1. Soak 300 g of wheat in water for at least 4 hours or overnight to soften the grains.
  2. In a pot, combine 1 whole chicken, chopped onion, 1 teaspoon of salt, 1 teaspoon of black pepper, and 2 liters of water.
  3. Bring the pot to a boil over high heat, then reduce to a simmer for 30 minutes to cook the chicken.
  4. Add the soaked wheat to the pot and cover it with water, stirring occasionally as it simmers gently for about 2 hours.
  5. Check that the wheat is very soft; then shred the chicken into bite-sized pieces and mix it back into the pot.
  6. Carefully stir to combine everything in the pot for even flavor distribution.
  7. Mix in 2 tablespoons of ghee, along with a pinch of cinnamon and cardamom to taste for added warmth.
  8. Serve the harees hot, ensuring it is well-combined and garnished if desired.
