Fungie recipe
A hearty cornmeal dish that's a Caribbean delight!
Ingredients
- 300 g cornmeal
- 800 ml water
- 1 tsp salt
- 50 g butter
- 10 g fresh herbs
How to make Fungie
- In a large pot, bring 900 ml of water to a boil and stir in 1 teaspoon of salt.
- Gradually whisk in 250 g of cornmeal while stirring continuously to prevent lumps from forming.
- Once combined, reduce the heat to low and cook the mixture for about 10 minutes, stirring constantly until thickened.
- Stir in 25 g of butter and mix well until the butter is fully melted, about 2 minutes.
- Remove the thickened mixture from the heat and pour it into a greased dish.
- Allow the fungie to cool slightly for easier slicing before proceeding.
- Use a knife to slice the cooled fungie into portions for serving.
- Serve the slices warm, topped with fresh herbs of your choice.
