Dolma recipe
Savor the rich flavors of Armenian stuffed grape leaves.
Ingredients
- 250 g grape leaves
- 150 g rice
- 250 g ground beef
- 1 unit onion
- 30 g parsley
- 2 tbsp tomato paste
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 30 ml lemon juice
How to make Dolma
- Rinse 200 g of grape leaves in cold water, then soak them in hot water for 10 minutes until softened.
- Chop 1 onion into small pieces for sautéing.
- In a pan, heat 2 tablespoons of olive oil over medium heat. Sauté the chopped onion for about 5 minutes until soft and translucent.
- In a bowl, mix 100 g of rice, 250 g of ground beef, sautéed onion, 2 tablespoons of chopped parsley, 2 tablespoons of tomato paste, ½ teaspoon of salt, and ¼ teaspoon of black pepper until well combined.
- Take a grape leaf and place a spoonful of the filling near the stem. Roll it tightly, tucking in the sides as you go.
- Arrange the rolled dolmas snugly in a pot with the seam side down.
- Drizzle the dolmas with 100 ml of lemon juice and add 250 ml of water carefully to the pot.
- Cover the pot and simmer over low heat for 45 minutes until the rice is cooked and the flavors meld together.
