Muamba de galinha recipe

Ingredients
- 800 g chicken
- 200 g onion
- 300 g tomato
- 100 ml palm oil
- 4 unit garlic
- 20 g ginger
- 1 tsp pepper
- 1 tsp salt
- 500 ml water
- 200 g spinach
How to make Muamba de galinha
- Cut the chicken into bite-sized pieces and season with 1 teaspoon of salt and 1 teaspoon of pepper.
- Chop 1 onion, 400 g of tomatoes, and mince 3 garlic cloves and 1 tablespoon of ginger before cooking.
- In a large pot, heat 3 tablespoons of palm oil over medium heat until hot.
- Sauté the onion, minced garlic, and ginger for about 2-3 minutes until fragrant and softened.
- Add the seasoned chicken pieces to the pot, browning them on all sides for about 8-10 minutes.
- Stir in the chopped tomatoes and 1 cup of water, bringing the mixture to a simmer.
- Cover the pot and cook for 30 minutes, stirring occasionally to prevent sticking.
- After 30 minutes, add 200 g of spinach, stirring well and cooking for an additional 10 minutes until wilted.
- Remove from heat and let the stew rest for 5 minutes before serving hot.
- Serve the muamba de galinha hot, accompanied by rice or funge.
