How to make Muamba de galinha

  1. Cut the chicken into bite-sized pieces and season with 1 teaspoon of salt and 1 teaspoon of pepper.

  3. In a large pot, heat 3 tablespoons of palm oil over medium heat until hot.
  4. Sauté the onion, minced garlic, and ginger for about 2-3 minutes until fragrant and softened.
  5. Add the seasoned chicken pieces to the pot, browning them on all sides for about 8-10 minutes.
  6. Stir in the chopped tomatoes and 1 cup of water, bringing the mixture to a simmer.
  7. Cover the pot and cook for 30 minutes, stirring occasionally to prevent sticking.
  8. After 30 minutes, add 200 g of spinach, stirring well and cooking for an additional 10 minutes until wilted.
  9. Remove from heat and let the stew rest for 5 minutes before serving hot.
  10. Serve the muamba de galinha hot, accompanied by rice or funge.
