How to make Lamingtons

  1. Preheat the oven to 180°C (350°F) and grease a square baking pan with butter.
  2. In a mixing bowl, cream together 125 g of unsalted butter and 150 g of caster sugar until light and fluffy.
  3. Add 2 eggs and 80 ml of milk to the mixture, stirring until well combined.
  4. Sift in 150 g of plain flour and 1 tsp of baking powder, mixing gently until smooth.
  5. Pour the batter into the greased pan and spread it evenly.
  6. Bake for 30 minutes, until golden brown and a toothpick comes out clean.
  7. Allow the cake to cool completely in the pan before cutting it into 16 equal squares.
  8. Melt 200 g of dark chocolate in a bowl over simmering water until smooth.
  9. Dip each square in melted chocolate, allowing excess to drip off.
  10. Roll each square in 100 g of desiccated coconut to coat them evenly.
