How to make Qutab

  1. In a bowl, combine 300 g of all-purpose flour, 150 ml of water, and 1 teaspoon of salt.
  2. Mix the ingredients until a dough forms, then cover and let it rest for 30 minutes.
  3. Finely chop 1 onion and a handful of fresh herbs before mixing the filling.
  4. In a bowl, mix the chopped onion, herbs, 400 g of ground lamb, and season with 1 teaspoon of black pepper.
  5. Divide the rested dough into 8 small balls and roll each ball into a thin circle, about 20 cm in diameter.
  6. On one half of each circle, place about 2 tablespoons of lamb filling.
  7. Fold the other half over the filling and press to seal the edges securely.
  8. Heat a skillet over medium-high heat and add 1 tablespoon of butter.
  9. Cook each qutab for 3-4 minutes on each side until golden brown.
  10. Remove the qutab from the skillet and serve warm with yogurt or a side salad.
