Flying fish and cou-cou recipe
A delicious Bajan classic of fish and savory cornmeal.
Ingredients
- 4 unit flying fish
- 60 ml lime juice
- 1 tsp salt
- 1 tsp black pepper
- 250 g cornmeal
- 750 ml water
- 30 g butter
- 100 g okra
How to make Flying fish and cou-cou
- In a bowl, marinate 4 flying fish with the juice of 1 lime, 1 teaspoon of salt, and 1 teaspoon of black pepper for 30 minutes.
- In a large pot, bring 1 liter of water to a boil over high heat.
- Gradually whisk in 200 g of cornmeal while stirring continuously to prevent lumps.
- Cook the cornmeal for about 20 minutes on medium heat until thickened, stirring occasionally.
- Add 50 g of butter and 100 g of chopped okra to the cornmeal and mix well until combined.
- While the cornmeal cooks, heat a grill or frying pan over medium heat.
- Grill or fry the marinated flying fish for 5-6 minutes on each side until cooked through and flaky.
- Once ready, serve each flying fish over a mound of cou-cou, ensuring a generous portion. Enjoy!
