How to make Kacchi biryani

  1. Begin by marinating 500 g of mutton with 1 cup of yogurt, 1 tablespoon of ginger paste, and 1 tablespoon of garlic paste for at least 1 hour in the fridge.
  2. Slice 2 onions thinly and fry them in 4 tablespoons of ghee over medium heat until golden brown, which should take about 10 minutes.
  3. Remove half of the fried onions for garnishing later, leaving the rest in the pot for flavor.
  4. Add the marinated mutton to the same pot and cook for about 20 minutes until it becomes tender, stirring occasionally.
  5. Meanwhile, soak 2 cups of basmati rice in water for at least 30 minutes before adding.
  6. Layer the soaked basmati rice over the cooked mutton, and top with a handful of mint and cilantro.
  7. Pour in 1.5 cups of water gently over the rice, being careful not to disturb the layers.
  8. Cover the pot tightly with a lid and cook on low heat for 45 minutes until the rice is fully cooked and fluffy.
  9. Remove from heat and let it rest for 10 minutes before serving to allow flavors to meld.
  10. Garnish the biryani with the fried onions you reserved and serve hot for a delightful meal.
