Kacchi biryani recipe

Ingredients
- 500 g basmati rice
- 800 g mutton
- 200 g yogurt
- 2 unit onion
- 1 tbsp ginger
- 1 tbsp garlic
- 2 unit green chili
- 50 g mint leaves
- 50 g cilantro
- 2 tbsp biryani masala
- 100 ml ghee
- 1 tsp salt
- 1000 ml water
How to make Kacchi biryani
- Begin by marinating 500 g of mutton with 1 cup of yogurt, 1 tablespoon of ginger paste, and 1 tablespoon of garlic paste for at least 1 hour in the fridge.
- Slice 2 onions thinly and fry them in 4 tablespoons of ghee over medium heat until golden brown, which should take about 10 minutes.
- Remove half of the fried onions for garnishing later, leaving the rest in the pot for flavor.
- Add the marinated mutton to the same pot and cook for about 20 minutes until it becomes tender, stirring occasionally.
- Meanwhile, soak 2 cups of basmati rice in water for at least 30 minutes before adding.
- Layer the soaked basmati rice over the cooked mutton, and top with a handful of mint and cilantro.
- Pour in 1.5 cups of water gently over the rice, being careful not to disturb the layers.
- Cover the pot tightly with a lid and cook on low heat for 45 minutes until the rice is fully cooked and fluffy.
- Remove from heat and let it rest for 10 minutes before serving to allow flavors to meld.
- Garnish the biryani with the fried onions you reserved and serve hot for a delightful meal.
