Carbonnade flamande recipe
A hearty beef stew with rich beer flavors.
Ingredients
- 800 g beef chuck
- 2 unit onion
- 3 unit carrots
- 4 unit garlic
- 500 ml beef broth
- 330 ml Belgian beer
- 2 unit bay leaves
- 1 tsp thyme
- 2 tbsp mustard
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
How to make Carbonnade flamande
- Cut 1 kg of beef chuck into bite-sized pieces and season with 1 teaspoon of salt and 1 teaspoon of black pepper.
- In a large pot, heat 2 tablespoons of olive oil over medium heat for 2 minutes.
- Add the beef pieces to the pot and brown on all sides for about 5-7 minutes until golden.
- Chop 2 onions, 2 carrots, and mince 2 garlic cloves while the beef is browning.
- Once browned, add the chopped onions, carrots, and garlic to the pot; sauté for 5 minutes until softened.
- Stir in 2 tablespoons of mustard until well combined with the vegetables.
- Pour in 330 ml of Belgian beer and 500 ml of beef broth; add 2 bay leaves and 1 teaspoon of thyme.
- Bring the mixture to a boil, then reduce heat to low and cover; let it simmer for 1.5 hours until beef is tender.
- Once cooked, remove from heat and let it rest for 10 minutes before serving.
- Serve the carbonnade flamande hot, with crusty bread or fries.
