Sankara recipe

Ingredients
- 800 g sweet potatoes
- 1 unit onion
- 100 g peanut butter
- 2 tbsp vegetable oil
- 1 tsp salt
- 500 ml water
How to make Sankara
- Peel 500 g of sweet potatoes and chop them into small cubes before starting.
- In a pot, heat 2 tablespoons of vegetable oil over medium heat.
- Sauté the chopped onion for about 5 minutes until it becomes translucent.
- Add the sweet potato cubes along with 300 ml of water to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until the sweet potatoes are tender.
- Once tender, stir in 3 tablespoons of peanut butter and 1 teaspoon of salt.
- Mix until well combined, making sure the peanut butter is fully incorporated.
- Mash the mixture with a fork or potato masher for about 2 minutes until smooth and creamy.
- Serve the Sankara warm, enjoying its rich texture.
