Kavarma recipe
Savor the rich flavors of traditional Bulgarian Kavarma.
Ingredients
- 800 g pork shoulder
- 2 unit onion
- 1 unit bell pepper
- 200 g mushrooms
- 2 tbsp tomato paste
- 250 ml red wine
- 4 unit garlic
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
How to make Kavarma
- Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
- Chop 1 onion and dice 1 bell pepper before adding them to the pot, sautéing for about 5 minutes until softened.
- Cut 500 g of pork shoulder into cubes and stir into the pot, cooking until browned on all sides, about 10 minutes.
- Slice 200 g of mushrooms and mince 3 garlic cloves, then mix them into the pot along with 1 teaspoon of paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for 2 more minutes.
- Pour in 250 ml of red wine and add 2 tablespoons of tomato paste, stirring to combine all ingredients well.
- Cover the pot and let it simmer gently for 60 minutes, stirring occasionally to prevent sticking.
- Taste and adjust seasoning if necessary, then remove from heat and let it rest for 5 minutes before serving.
- Serve the Kavarma hot, accompanied with crusty bread or rice for a complete meal.
