How to make Kavarma

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  2. Chop 1 onion and dice 1 bell pepper before adding them to the pot, sautéing for about 5 minutes until softened.
  3. Cut 500 g of pork shoulder into cubes and stir into the pot, cooking until browned on all sides, about 10 minutes.
  4. Slice 200 g of mushrooms and mince 3 garlic cloves, then mix them into the pot along with 1 teaspoon of paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for 2 more minutes.
  5. Pour in 250 ml of red wine and add 2 tablespoons of tomato paste, stirring to combine all ingredients well.
  6. Cover the pot and let it simmer gently for 60 minutes, stirring occasionally to prevent sticking.
  7. Taste and adjust seasoning if necessary, then remove from heat and let it rest for 5 minutes before serving.
  8. Serve the Kavarma hot, accompanied with crusty bread or rice for a complete meal.
