How to make Samosa

  1. Boil 3 medium potatoes in salted water until tender, about 15 minutes, then drain and peel them.
  2. Finely chop 1 onion, then sauté it in 2 tablespoons of oil over medium heat until golden brown, around 5 minutes.
  3. Add 1 teaspoon each of cumin seeds, coriander powder, and turmeric powder, plus 1 teaspoon of salt to the mashed potatoes and combine well.
  4. Add 1 cup of peas to the potato mixture, stirring until evenly incorporated.
  5. In a mixing bowl, combine 2 cups of all-purpose flour with a pinch of salt, then gradually add 1/2 cup of water to form a smooth dough.
  6. Knead the dough gently for about 5 minutes, then cover with a cloth and let it rest for 30 minutes.
  7. Roll out the dough to a thick sheet and cut it into circles using a cup or cutter.
  8. Fill each circle with a portion of the potato pea mixture and fold, sealing the edges completely.
  9. In a deep frying pan, heat 3 cups of oil over medium heat until hot, around 350°F (175°C).
  10. Deep fry the samosas until golden brown and crispy, about 5-7 minutes, turning occasionally for even cooking.
  11. Remove the samosas and drain on paper towels, then serve hot with your favorite sauce.
