How to make Akara

  1. Soak 250 g of black-eyed peas in water for 4 hours, then drain them well.
  2. Chop 1 onion, 1 bell pepper, and 1 scotch bonnet pepper before blending.
  3. Blend the soaked peas with the chopped onion, diced bell pepper, scotch bonnet pepper, and 1 teaspoon of salt until smooth.
  4. Heat 500 ml of vegetable oil in a deep pan over medium heat until it shimmers.
  5. Scoop about 2 tablespoons of the batter into the hot oil.
  6. Fry the batter until golden brown on both sides, about 4-5 minutes total.
  7. Remove the akara from the oil and drain on paper towels.
  8. Serve warm as a snack or appetizer.
