  1. Soak 250 g of black-eyed peas in water overnight, then drain.
  2. Chop 1 onion and 1 green bell pepper; heat 2 tablespoons of oil in a large pot over medium heat.

  6. Pour in 1 liter of chicken broth and add 1 teaspoon each of cayenne pepper, salt, and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low and let simmer for 30 minutes.
  8. Remove the ham hock, shred the meat, and stir it back into the dish before serving.
