How to make Feijoada

  1. Soak 400 g of black beans in water overnight until softened, about 8 hours.
  2. In a large pot, heat 2 tbsp of olive oil over medium heat.
  3. Add 1 chopped onion and 2 minced garlic cloves; sauté until soft, about 5 minutes.
  4. Add 300 g of pork shoulder, 200 g of chorizo sausage, and 300 g of beef brisket; brown the meat for 5-7 minutes.
  5. Stir in the soaked beans, 2 bay leaves, 1 tsp of salt, and 1/2 tsp of black pepper; cover with water.
  6. Bring to a simmer, then reduce heat and cook for about 2-3 hours, stirring occasionally until the beans and meat are tender.
  7. Check the consistency and season if necessary; ensure it's not too dry or soupy.
  8. Serve hot with cooked rice and garnish with slices of orange.
