Moqueca recipe

Ingredients
- 600 g white fish fillets
- 400 ml coconut milk
- 1 unit bell pepper
- 1 unit onion
- 2 unit tomato
- 1 unit coriander
- 2 unit lime
- 2 tbsp olive oil
- 3 unit garlic
- 1 tsp salt
- 1 tsp black pepper
How to make Moqueca
- In a large pot, heat 2 tbsp of olive oil over medium heat until shimmering.
- Add 1 chopped onion, 2 minced garlic cloves, and 1 chopped bell pepper; sauté until soft, about 5 minutes.
- Stir in 2 diced tomatoes and cook for an additional 5 minutes, stirring often.
- Pour in 400 ml of coconut milk and add 500 g of white fish fillets; season with 1 tsp salt and 1/2 tsp black pepper.
- Bring to a gentle simmer over medium heat, cooking for 20 minutes until the fish is cooked through.
- Check that the fish flakes easily with a fork when done to ensure it’s properly cooked.
- Remove from heat and garnish with fresh coriander leaves; squeeze lime juice over before serving.
- Serve hot in bowls with a side of rice.
