How to make Cracked conch

  1. Tenderize 250 g of conch meat by pounding it with a mallet until it is thin and even.
  2. In a bowl, mix together 100 g of all-purpose flour, 100 g of cornmeal, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.
  3. In a separate bowl, whisk together 1 egg and 120 ml of milk until the mixture is light and frothy.
  4. Dredge the tenderized conch in the flour mixture, ensuring it is fully coated all over the surface.
  5. Dip the coated conch into the egg mixture until it is evenly covered.
  6. Heat 500 ml of oil in a pan over medium heat until it reaches about 175°C (350°F).
  7. Carefully lower the conch into the hot oil to prevent splashing, and fry for 3-4 minutes on each side.
  8. Remove the conch from the oil when it is golden brown and crispy, placing it on paper towels to drain excess oil.
