Ingredients
- 500 g conch meat
- 200 g all-purpose flour
- 100 g cornmeal
- 1 unit egg
- 100 ml milk
- 1 tsp salt
- 1 tsp black pepper
- 500 ml oil
How to make Cracked conch
- Tenderize 250 g of conch meat by pounding it with a mallet until it is thin and even.
- In a bowl, mix together 100 g of all-purpose flour, 100 g of cornmeal, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.
- In a separate bowl, whisk together 1 egg and 120 ml of milk until the mixture is light and frothy.
- Dredge the tenderized conch in the flour mixture, ensuring it is fully coated all over the surface.
- Dip the coated conch into the egg mixture until it is evenly covered.
- Heat 500 ml of oil in a pan over medium heat until it reaches about 175°C (350°F).
- Carefully lower the conch into the hot oil to prevent splashing, and fry for 3-4 minutes on each side.
- Remove the conch from the oil when it is golden brown and crispy, placing it on paper towels to drain excess oil.
