Peas n' rice recipe
A flavorful Bahamian classic that’s easy to make!
Ingredients
- 300 g long grain rice
- 200 g green peas
- 1 unit onion
- 2 unit garlic
- 400 ml coconut milk
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp thyme
How to make Peas n' rice
- Rinse 250 g of long grain rice under cold water until the water runs clear and set aside.
- In a pot, heat 1 tablespoon of oil over medium heat, then sauté 1 chopped onion and 2 minced cloves of garlic for about 3 minutes until soft.
- Pour in 400 ml of coconut milk along with 250 ml of water, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of thyme; bring to a boil.
- Add the rinsed rice into the pot, stirring well to combine, then reduce heat to low.
- Cover the pot and let it simmer for 15 minutes, until the rice absorbs the liquid completely.
- After 15 minutes, stir in 150 g of green peas, cooking uncovered for an additional 5 minutes.
- Fluff the rice gently with a fork before serving, garnishing with fresh thyme if you like.
