Moambe recipe
A rich and flavorful chicken stew from Congo.
Ingredients
- 800 g chicken thighs
- 100 ml palm oil
- 1 unit onion
- 3 unit garlic
- 1 tbsp ginger
- 400 g tomatoes
- 100 g peanut butter
- 500 ml water
- 1 tsp salt
- 1 tsp black pepper
How to make Moambe
- In a large pot, heat 4 tablespoons of palm oil over medium heat until shimmering.
- Add 1 chopped onion, 2 minced garlic cloves, and 1 tablespoon of minced ginger; sauté for 5-7 minutes until softened.
- Add 4 chicken thighs, browning them on all sides for about 8-10 minutes.
- Stir in 2 chopped tomatoes, 3 tablespoons of peanut butter, 1 cup of water, salt, and black pepper to taste.
- Reduce heat, cover, and let it simmer for 45 minutes until the chicken is tender and fully cooked.
- Serve hot over rice or plantains, enjoying the rich flavor.
