How to make Ndole

  1. Wash 300 g of bitterleaf thoroughly under running water, then blanch briefly in boiling water, and set aside.
  2. In a pot, heat 4 tablespoons of palm oil over medium heat until hot, which takes around 2 minutes.
  3. Add 1 chopped onion to the pot and sauté until it's translucent, about 5 minutes, stirring occasionally.
  4. Add 200 g of fish to the pot, gently stirring until the fish begins to flake, about 5-8 minutes.
  5. Stir in 150 g of groundnut paste and 300 ml of water; mix until smooth, then season with 1 teaspoon of salt and ½ teaspoon of pepper.
  6. Add the blanched bitterleaf to the pot, ensuring it is well mixed into the sauce.
  7. Cover the pot and let simmer on low heat for about 15 minutes, stirring occasionally until everything is heated through.
  8. Remove the pot from heat and let the dish rest for a few minutes before serving.
  9. Serve hot, accompanied by rice or plantains for a comforting meal.
