Ropa vieja recipe

Ingredients
- 800 g flank steak
- 1 unit onion
- 1 unit bell pepper
- 4 unit garlic
- 400 ml tomato sauce
- 1 tsp cumin
- 1 tsp oregano
- 2 unit bay leaves
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 500 ml water
How to make Ropa vieja
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
- Sear 500 g of flank steak on all sides until browned, about 5 minutes per side.
- Chop 1 onion, dice 1 bell pepper, and mince 2 garlic cloves, then add them to the pot.
- Sauté the mixture for about 4 minutes until the vegetables are soft.
- Stir in 400 g of tomato sauce, 1 teaspoon of cumin, 1 teaspoon of oregano, 2 bay leaves, 1 teaspoon of salt, and ½ teaspoon of black pepper.
- Pour in 2 cups of water, and bring to a boil over high heat.
- Reduce the heat to low, cover the pot, and let it simmer for 90 minutes until the beef is tender.
- After the cooking time, remove the steak and shred it with two forks.
- Mix the shredded beef back into the sauce and stir well before serving.
- Serve the ropa vieja hot, garnished with fresh herbs if desired.
