How to make Ropa vieja

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Sear 500 g of flank steak on all sides until browned, about 5 minutes per side.
  3. Chop 1 onion, dice 1 bell pepper, and mince 2 garlic cloves, then add them to the pot.
  4. Sauté the mixture for about 4 minutes until the vegetables are soft.
  5. Stir in 400 g of tomato sauce, 1 teaspoon of cumin, 1 teaspoon of oregano, 2 bay leaves, 1 teaspoon of salt, and ½ teaspoon of black pepper.
  6. Pour in 2 cups of water, and bring to a boil over high heat.
  7. Reduce the heat to low, cover the pot, and let it simmer for 90 minutes until the beef is tender.
  8. After the cooking time, remove the steak and shred it with two forks.
  9. Mix the shredded beef back into the sauce and stir well before serving.
  10. Serve the ropa vieja hot, garnished with fresh herbs if desired.
