How to make Kleftiko

  1. Preheat the oven to 160°C (320°F) and prepare a roasting pan by lightly greasing it.
  2. Mince 4 garlic cloves and place them in a mixing bowl with 4 tablespoons of olive oil.
  3. Add the juice of 1 lemon, 2 teaspoons of oregano, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  4. Whisk the ingredients together until fully combined to create a marinade.
  5. Rub the marinade all over a 1.5 kg lamb shoulder evenly to ensure flavor penetration.
  6. Chop 500 g of potatoes, 400 g of carrots, and 1 onion into large pieces for roasting.
  7. Place the seasoned lamb in the roasting pan and surround it with the chopped vegetables.
  8. Cover the pan tightly with foil and roast in the oven for 2.5 to 3 hours until the lamb is tender.
  9. After the initial roasting time, remove the foil and continue cooking for an additional 30 minutes until the lamb browns.
  10. Once cooked, let the lamb rest for 10 minutes before slicing and serving with the vegetables.
