How to make Maraq

  1. In a large pot, measure and heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Chop 1 onion and mince 3 garlic cloves; add to the pot and sauté until golden brown, about 5 minutes.
  3. Add 800 g of chicken pieces to the pot and brown them on all sides, approximately 8 minutes.
  4. Dice 2 carrots and 2 potatoes; chop 2 tomatoes and add all to the pot, mixing well.
  5. Stir in 1 teaspoon each of cumin, coriander, black pepper, and salt, along with 1 liter of water; bring to a boil.
  6. Once boiling, reduce heat to low, cover, and simmer for 45 minutes until the chicken is tender.
  7. Taste the broth and adjust seasoning if necessary before removing from heat.
  8. Serve the stew hot in bowls, garnished with fresh herbs if desired.
