Maraq recipe
A fragrant and hearty Djiboutian stew to savor.
Ingredients
- 800 g chicken
- 2 unit onion
- 4 unit garlic
- 2 unit carrot
- 2 unit potato
- 400 g tomato
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp black pepper
- 1 tsp salt
- 1 unit water
- 2 tbsp olive oil
How to make Maraq
- In a large pot, measure and heat 2 tablespoons of olive oil over medium heat until shimmering.
- Chop 1 onion and mince 3 garlic cloves; add to the pot and sauté until golden brown, about 5 minutes.
- Add 800 g of chicken pieces to the pot and brown them on all sides, approximately 8 minutes.
- Dice 2 carrots and 2 potatoes; chop 2 tomatoes and add all to the pot, mixing well.
- Stir in 1 teaspoon each of cumin, coriander, black pepper, and salt, along with 1 liter of water; bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 45 minutes until the chicken is tender.
- Taste the broth and adjust seasoning if necessary before removing from heat.
- Serve the stew hot in bowls, garnished with fresh herbs if desired.
