How to make Mangú

  1. Peel 4 green plantains and cut them into thick rounds, about 2.5 cm, before cooking.
  2. In a large pot, bring 1 liter of water to a boil, adding 1 teaspoon of salt.
  3. Add the sliced plantains to the boiling salted water and cook for about 20 minutes until fork-tender.
  4. While the plantains are cooking, chop 1 onion and mince 2 garlic cloves for the sauté mixture.
  5. In a skillet, melt 2 tablespoons of butter over medium heat, about 2 minutes.
  6. Sauté the chopped onion until soft and golden, about 5 minutes, then add the minced garlic and cook for 1 more minute.
  7. After draining the plantains, place them in a mixing bowl and mash them well until smooth, about 3 minutes.
  8. Combine the mashed plantains with the sautéed onion and garlic mixture, stirring until evenly mixed.
  9. Taste and adjust seasoning with salt if necessary. Serve the mangú warm, with more melted butter on top if desired.
