How to make Sancocho

  1. Cut 500 g of chicken and 500 g of beef into bite-sized pieces before cooking, about 2.5 cm each.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat, about 2 minutes.
  3. Sauté 1 chopped onion and 2 minced garlic cloves until fragrant, about 3 minutes.
  4. Add the chicken and beef pieces to the pot, cooking until browned, about 8 minutes.
  5. Pour in 2 liters of water and add 3 chopped potatoes, 2 chopped carrots, and 2 sliced plantains.
  6. Include 1 ear of corn, season with 1 teaspoon of salt and ½ teaspoon of black pepper, and stir well.
  7. Bring the pot to a simmer, then cover and cook for about 1 hour, stirring occasionally, until the meat and vegetables are tender.
  8. Taste the broth and adjust the seasoning if needed before serving.
  9. Before serving, garnish the dish with a handful of freshly chopped cilantro, for added flavor.
