- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil

How to make Chorba frik
- Chop 1 onion, 1 carrot, and 1 celery stalk. Dice 400 g of lamb and chop 1 tomato for the soup preparation.
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
- Sauté the chopped onion for 2 minutes until translucent.
- Add the chopped carrot and celery stalk; continue to sauté for another 3 minutes until softened.
- Add 400 g of diced lamb to the pot, browning on all sides for about 8 minutes until it's golden brown.
- Stir in the chopped tomato, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of salt, and ½ teaspoon of black pepper, mixing well.
- Pour in 400 g of chickpeas and 1.5 liters of water; bring to a boil over high heat.
- Once boiling, reduce heat to low and simmer for 30 minutes, stirring occasionally to prevent sticking.
- Finally, stir in 100 g of frik and cook for an additional 20 minutes until it softens.
- Remove from heat and let it rest for 5 minutes before serving.
- Serve hot, garnished with a sprinkle of fresh herbs if desired.
