Seco de pollo recipe

Ingredients
- 800 g chicken thighs
- 1 unit onion
- 4 unit garlic
- 1 unit bell pepper
- 2 unit tomato
- 1 unit coriander
- 250 ml beer
- 500 ml water
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 2 tbsp olive oil
How to make Seco de pollo
- In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
- Add 1 chopped onion, 3 minced garlic cloves, and 1 chopped bell pepper to the pot.
- Sauté the mixture until soft, stirring occasionally for about 5 minutes.
- Season 4 chicken thighs with salt, black pepper, and 1 teaspoon of cumin.
- Add the chicken thighs to the pot and brown on all sides for about 5-7 minutes total.
- Stir in the 2 chopped tomatoes and cook for 2 minutes until they release their juices.
- Pour in 330 ml of beer and 250 ml of water, mixing well to combine.
- Bring the mixture to a simmer, then cover the pot and cook for 45 minutes.
- Stir occasionally, allowing the chicken to become tender through cooking.
- Before serving, garnish with fresh coriander leaves on top.
