How to make Seco de pollo

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
  2. Add 1 chopped onion, 3 minced garlic cloves, and 1 chopped bell pepper to the pot.
  3. Sauté the mixture until soft, stirring occasionally for about 5 minutes.
  4. Season 4 chicken thighs with salt, black pepper, and 1 teaspoon of cumin.
  5. Add the chicken thighs to the pot and brown on all sides for about 5-7 minutes total.
  6. Stir in the 2 chopped tomatoes and cook for 2 minutes until they release their juices.
  7. Pour in 330 ml of beer and 250 ml of water, mixing well to combine.
  8. Bring the mixture to a simmer, then cover the pot and cook for 45 minutes.
  9. Stir occasionally, allowing the chicken to become tender through cooking.
  10. Before serving, garnish with fresh coriander leaves on top.
