Molokhia recipe
A flavorful and nutritious Egyptian green stew.
Ingredients
- 400 g molokhia leaves
- 500 g chicken
- 4 unit garlic
- 2 tbsp coriander
- 1000 ml vegetable broth
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
How to make Molokhia
- In a pot, boil 1 whole chicken in vegetable broth until fully cooked, about 1 hour.
- Once cooked, remove the chicken and shred it into pieces using two forks.
- In the same pot, heat 2 tablespoons of olive oil over medium heat.
- Sauté 4 minced garlic cloves in the oil until golden brown, about 2 minutes.
- Add 300 g of molokhia leaves to the pot and stir for a few minutes until wilted.
- Pour the broth used to boil the chicken back into the pot, mixing well.
- Add the shredded chicken back in along with 1 tablespoon of coriander, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Let the mixture simmer for 10 minutes, stirring occasionally.
- Serve hot, ideally with a side of rice or fresh bread.
