Tsebhi derho recipe
A flavorful Eritrean chicken stew with spices.
Ingredients
- 800 g chicken
- 2 unit onion
- 4 unit garlic
- 2 tbsp ginger
- 2 tbsp tomato paste
- 2 tbsp berbere spice
- 60 ml vegetable oil
- 500 ml water
- 1 tsp salt
- 1 tsp pepper
How to make Tsebhi derho
- Gather all ingredients: 1 kg of chicken, 2 chopped onions, 4 minced garlic cloves, and 1 inch of minced ginger.
- Measure out 3 tablespoons of vegetable oil, 2 tablespoons of berbere spice, and 2 tablespoons of tomato paste.
- In a large pot, heat 3 tablespoons of vegetable oil over medium heat until shimmering and hot.
- Add 2 chopped onions, stirring frequently until they turn golden brown, about 5-7 minutes.
- Incorporate 4 minced garlic cloves and 1 inch of minced ginger, cooking for about 2 minutes until fragrant.
- Add 1 kg of chicken pieces along with 2 tablespoons of berbere spice, 1 teaspoon salt, and 1/2 teaspoon pepper, stirring well to combine.
- Mix in 2 tablespoons of tomato paste and 500 ml of water, bringing the mixture to a boil while stirring occasionally.
- Reduce heat to low, cover the pot, and let it simmer for about 45 minutes until the chicken is tender and the sauce thickens, stirring occasionally.
