How to make Doro wat

  1. Chop 2 onions, 3 garlic cloves, and 1 tablespoon of ginger before cooking.
  2. In a large pot, heat 3 tablespoons of oil over medium heat for 1 minute.
  3. Sauté the chopped onions for about 10 minutes, until they turn golden brown, stirring occasionally.
  4. Add the minced garlic and grated ginger to the pot, cooking for 2 minutes until fragrant.
  5. Stir in 2 tablespoons of berbere spice and 2 tablespoons of tomato paste, cooking for 3-4 minutes while stirring.
  6. Add 1 kg of chicken pieces and 500 ml of water, bringing to a simmer over medium heat.
  7. Cover the pot and cook for about 45 minutes, stirring occasionally until the chicken is tender.
  8. Season with 1 teaspoon of salt and add 4 hard-boiled eggs, cooking for another 10 minutes until the flavors meld.
  9. Serve the doro wat hot with injera or rice, garnishing as desired.
