How to make Karjalanpiirakka

  1. In a saucepan, combine 100 g of rice with 500 ml of milk. Cook on low heat for about 30 minutes until the rice is soft and creamy.
  2. Once the rice is cooked, allow it to cool completely before using.
  3. In a mixing bowl, combine 200 g of rye flour, 125 ml of water, and a pinch of salt. Mix until the dough is smooth and pliable.
  4. On a floured surface, take the dough and roll it into thin circles about 10 cm in diameter.
  5. Place a generous spoonful of the cooled rice filling in the center of each circle of dough.
  6. Carefully fold the edges of the dough over the filling, pinching to seal well and form an enclosed pocket.
  7. Preheat your oven to 225°C before baking the pastries.
  8. Arrange the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes until the edges turn golden brown.
  9. Once baked, brush the tops with 50 g of melted butter before serving.
