Lohikeitto recipe
Savor the creamy goodness of Finnish salmon soup!
Ingredients
- 400 g salmon fillet
- 400 g potatoes
- 200 g carrots
- 150 g leeks
- 10 g dill
- 1000 ml vegetable broth
- 200 ml cream
- 1 tsp salt
- 1 tsp black pepper
How to make Lohikeitto
- Peel and chop 300 g of potatoes into small cubes for even cooking.
- Peel and dice 200 g of carrots into small cubes and set aside.
- Slice 100 g of leeks and rinse them under cold water to remove any dirt.
- In a pot, combine 1 liter of vegetable broth with the chopped potatoes, carrots, and leeks. Bring to a simmer for about 15 minutes until vegetables are tender.
- Add 250 g of diced salmon to the pot along with 100 ml of cream, a pinch of salt, and black pepper to taste.
- Stir gently and cook for an additional 5-7 minutes until the salmon is cooked through and flakes easily.
- Taste and adjust seasoning if necessary before serving the soup.
- Ladle the hot soup into bowls and garnish generously with fresh dill just before serving.
