How to make Poronkäristys

  1. Slice 500 g of reindeer meat into thin strips for even cooking and tenderness.
  2. In a large pan, melt 50 g of butter over medium heat before starting the sautéing process.
  3. Add 1 chopped onion to the pan once the butter is melted and sauté until translucent, about 5 minutes.
  4. Carefully add the sliced reindeer meat to the pan, cooking until browned all over, about 8-10 minutes.
  5. Pour in 200 ml of water and season with 1 teaspoon of salt and black pepper to taste.
  6. Cover the pan and let simmer for 30 minutes, stirring occasionally for even cooking.
  7. Meanwhile, in another pot, boil 300 g of peeled and diced potatoes in salted water until tender, about 15 minutes.
  8. Drain the potatoes and serve them as a base for the sautéed reindeer meat on plates.
