How to make Tinola

  1. Start by preparing your ingredients: 1 kg of chicken, 2 liters of water, and chopping the ginger, garlic, and onion as necessary.
  2. In a large pot, combine 1 kg of chicken and 2 liters of water; bring to a boil over high heat.
  3. Reduce the heat and add 50 g of ginger, 4 cloves of garlic, and 1 chopped onion; simmer on low heat for 30 minutes.
  4. After 30 minutes, stir in 200 g of green papaya and let it cook until tender, about 10 minutes longer.
  5. Once the papaya is tender, add 100 g of spinach and 2 tablespoons of fish sauce; cook for an additional 5 minutes.
  6. Season the soup with 1 teaspoon of black pepper, stirring gently to combine the flavors.
  7. Remove from heat and let it rest for a couple of minutes before serving hot.
  8. Serve the Tinola in bowls, garnishing with fresh herbs like cilantro if desired.
