How to make Nyembwe

  1. Chop 1 onion, 3 cloves of garlic, and 20 g of ginger, preparing them before cooking starts.
  2. Heat 4 tablespoons of palm oil in a large pot over medium heat until shimmering, ensuring it doesn't smoke.
  3. Sauté the chopped onion, minced garlic, and ginger in the hot oil until fragrant, for about 5 minutes.
  4. Add 1 kg of chicken pieces to the pot, browning them on all sides for about 10 minutes to develop flavor.
  5. Stir in 2 diced tomatoes, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook for 10 minutes, stirring occasionally to mix.
  6. Pour in 500 ml of water and bring the mixture to a boil over high heat, then reduce the heat to low.
  7. Cover the pot and let it simmer for 30 minutes until the chicken is tender, stirring occasionally to prevent sticking.
  8. Serve the nyembwe hot alongside boiled cassava for a complete meal.
