How to make Khinkali

  1. In a bowl, mix 500 g of all-purpose flour with 200 ml of water to form a smooth dough, ensuring no lumps remain.
  2. Knead the dough for about 10 minutes until it feels elastic and smooth; cover it with a towel and let it rest for 30 minutes.
  3. Finely chop 1 onion and 2 cloves of garlic; then mix them with 500 g of ground beef, 1 teaspoon of coriander, salt, black pepper, and 2 tablespoons of chopped parsley.
  4. Roll out the rested dough on a floured surface and cut it into 10-12 circles each about 10 cm in diameter using a cutter or glass.
  5. Spoon the meat mixture into the center of each dough circle, ensuring it's not overfilled to avoid tearing the dough.
  6. Pinch the edges of each circle together to seal, forming a pleated pouch shape, ensuring there are no openings.
  7. Bring a large pot of salted water to a boil over high heat; gently drop the dumplings in the boiling water.
  8. Boil the khinkali for 10-15 minutes or until they float and are cooked through, stirring occasionally to prevent sticking.
