How to make Waakye

  1. Rinse 200 g of rice and 100 g of black-eyed peas thoroughly under cold water until clean and free of impurities.
  2. In a large pot, combine 1 liter of water, the rinsed rice, black-eyed peas, and 2 waakye leaves.
  3. Bring the mixture to a boil over high heat, then reduce the heat to low to let it simmer.
  4. Let it simmer for 1 hour, stirring occasionally to prevent sticking at the bottom.
  5. After 1 hour, add 1 teaspoon of salt, stirring gently to distribute it evenly throughout the mixture.
  6. Once cooked, carefully remove the waakye leaves from the pot and discard them.
  7. Fluff the rice and peas with a fork before serving to separate the grains.
  8. Serve warm alongside your choice of sides like fried plantains or stewed beans.
