Waakye recipe

Ingredients
- 400 g rice
- 200 g black-eyed peas
- 5 unit waakye leaves
- 1200 ml water
- 1 tsp salt
- 2 tbsp vegetable oil
How to make Waakye
- Rinse 200 g of rice and 100 g of black-eyed peas thoroughly under cold water until clean and free of impurities.
- In a large pot, combine 1 liter of water, the rinsed rice, black-eyed peas, and 2 waakye leaves.
- Bring the mixture to a boil over high heat, then reduce the heat to low to let it simmer.
- Let it simmer for 1 hour, stirring occasionally to prevent sticking at the bottom.
- After 1 hour, add 1 teaspoon of salt, stirring gently to distribute it evenly throughout the mixture.
- Once cooked, carefully remove the waakye leaves from the pot and discard them.
- Fluff the rice and peas with a fork before serving to separate the grains.
- Serve warm alongside your choice of sides like fried plantains or stewed beans.
