How to make Kiviak

  1. Clean and gut each auk, removing feathers, entrails, and internal organs.
  2. Layer 10-15 auk in the seal skin, sprinkling 100 g of seaweed and 50 g of salt between each bird.
  3. Sew the open end of the seal skin tightly to prevent air from entering.
  4. Bury the sealed skin in cold ground for about 3 months, marking the spot for later retrieval.
  5. After 3 months, carefully remove the auk from the skin and enjoy it raw or cooked.
