Kiviak recipe
A unique Greenlandic delicacy of fermented seabirds.
Ingredients
- 4 unit auk
- 1 unit seal skin
- 200 g seaweed
- 50 g salt
How to make Kiviak
- Clean and gut each auk, removing feathers, entrails, and internal organs.
- Layer 10-15 auk in the seal skin, sprinkling 100 g of seaweed and 50 g of salt between each bird.
- Sew the open end of the seal skin tightly to prevent air from entering.
- Bury the sealed skin in cold ground for about 3 months, marking the spot for later retrieval.
- After 3 months, carefully remove the auk from the skin and enjoy it raw or cooked.
