How to make Benachin

  1. Rinse 300 g of rice under cold water until the water runs clear, then set aside.
  2. In a large pot, heat 2 tbsp of vegetable oil over medium heat until shimmering.
  3. Add 150 g of chopped onion and sauté until translucent, about 5 minutes, stirring occasionally.
  4. Introduce 500 g of chicken pieces into the pot and brown for about 10 minutes on all sides, turning them frequently.
  5. Stir in 3 tbsp of tomato paste, mixing well with the chicken and onions for 2 minutes.
  6. Add 1 diced carrot, 1 tsp of salt, 1/2 tsp of black pepper, and 750 ml of water into the pot.
  7. Bring the mixture to a boil, then lower the heat and add the rinsed rice, stirring gently.
  8. Cover the pot and simmer for 25-30 minutes until rice is tender and water is absorbed; fluff with a fork.
  9. Remove from heat and let it rest for 5 minutes before serving hot.
