Domoda recipe
A rich, flavorful peanut stew that's simply delicious!
Ingredients
- 200 g peanut butter
- 600 g chicken thighs
- 1 unit onion
- 2 unit tomato
- 2 unit carrot
- 300 g sweet potato
- 2 tbsp vegetable oil
- 800 ml water
- 1 tsp salt
- 1 tsp black pepper
How to make Domoda
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat until shimmering.
- Add 1 chopped onion and sauté until it becomes translucent, about 5 minutes, stirring occasionally.
- Add 4 chicken thighs to the pot, browning them on all sides for about 6-8 minutes, flipping them as needed.
- Stir in 2 chopped tomatoes, mixing well with the chicken and onion for 2 minutes.
- Incorporate 200 g of peanut butter into the pot, stirring until well combined with the other ingredients.
- Pour in 1 liter of water and bring the mixture to a gentle simmer.
- Add 1 diced carrot and 1 diced sweet potato, along with salt and black pepper to taste.
- Cover the pot and cook for 30 minutes until the chicken is fully cooked and vegetables are fork-tender.
- Remove from heat and let it rest for 5 minutes before serving hot with rice or bread.
