How to make Yassa

  1. In a large bowl, marinate 4 pieces of chicken with the juice of 2 lemons, 2 tablespoons of mustard, and 4 minced garlic cloves for at least 1 hour.
  2. Slice 2 onions and 1 hot pepper; set them aside after cutting.
  3. Heat 3 tablespoons of vegetable oil in a pan over medium heat until shimmering.
  4. Add the sliced onions and hot pepper, sautéing until soft, about 8 minutes, stirring occasionally.
  5. Add the marinated chicken along with the bay leaves to the pan, browning the chicken on all sides for 6-8 minutes.
  6. Pour in the remaining marinade from the bowl and bring to a gentle simmer.
  7. Cover the pot and cook for 30-40 minutes until the chicken is fully cooked and tender.
  8. Remove from heat and let it rest for 5 minutes before serving hot with rice or bread, garnished with sautéed onions.
