Ingredients
- 800 g chicken
- 2 unit onion
- 4 unit garlic
- 400 g tomato
- 100 g peanut butter
- 50 ml vegetable oil
- 1 tsp salt
- 1 tsp black pepper
- 500 ml water
How to make Okono
- Cut 500 g of chicken into bite-sized pieces and season with 1 teaspoon of salt and ½ teaspoon of black pepper.
- Heat 2 tablespoons of vegetable oil in a pot over medium-high heat.
- Brown the chicken pieces for about 5 minutes until golden on all sides, stirring occasionally.
- Add 1 chopped onion and 2 minced garlic cloves to the pot and sauté for 3 minutes until the onion becomes soft and fragrant.
- Stir in 2 chopped tomatoes and 3 tablespoons of peanut butter, mixing well for 2 minutes until heated through.
- Pour in 1 cup of water and stir the mixture well, bringing it to a simmer.
- Cover the pot and let it simmer for 30 minutes until the chicken is fully cooked and tender.
- Adjust seasoning, and serve hot with rice or plantains for a complete meal.
