How to make Pepian

  1. Chop 1 onion, 2 bell peppers, and 3 garlic cloves before starting. Measure 500 g of chicken thighs, 400 g of tomatoes, and 100 g of pumpkin seeds.
  2. In a pot, heat 2 tablespoons of oil over medium-high heat until hot.
  3. Add 500 g of chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
  4. Add the chopped onion, minced garlic, and chopped bell peppers to the pot; sauté for 8 minutes until softened.
  5. In a blender, combine 400 g of tomatoes, 100 g of pumpkin seeds, 1 tablespoon of coriander, and 1 teaspoon of cumin; blend until smooth.
  6. Pour the blended mixture into the pot with the chicken and vegetables. Stir well to combine.
  7. Add 500 ml of chicken broth, 1 teaspoon of salt, and ½ teaspoon of black pepper; mix thoroughly.
  8. Bring the stew to a simmer, cover partially, and cook for 60 minutes until the chicken is very tender.
  9. Taste and adjust seasoning. Serve hot, accompanied by rice or tortillas.
