Caldo verde recipe
A comforting green soup bursting with flavor!
Ingredients
- 500 g potatoes
- 300 g kale
- 1 unit onion
- 3 unit garlic
- 3 tbsp olive oil
- 1 unit vegetable broth
- 1 tsp salt
- 1 tsp black pepper
How to make Caldo verde
- Peel and dice 4 potatoes, 1 onion, and 3 garlic cloves; set aside for cooking.
- In a large pot, heat 2 tablespoons of olive oil over medium heat for 2 minutes.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and sauté for another minute until fragrant.
- Add the diced potatoes and 1 liter of vegetable broth to the pot.
- Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 20 minutes.
- Once the potatoes are tender, add 200 g of chopped kale to the pot.
- Simmer for an additional 10 minutes until the kale is tender.
- Carefully blend the soup until smooth, then return it to low heat.
- Season with salt and black pepper to taste, stirring gently.
- Serve hot, drizzled with a little olive oil on top.
