How to make Caldo verde

  1. Peel and dice 4 potatoes, 1 onion, and 3 garlic cloves; set aside for cooking.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat for 2 minutes.
  3. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  4. Stir in the minced garlic and sauté for another minute until fragrant.
  5. Add the diced potatoes and 1 liter of vegetable broth to the pot.
  6. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 20 minutes.

  8. Simmer for an additional 10 minutes until the kale is tender.
  9. Carefully blend the soup until smooth, then return it to low heat.
  10. Season with salt and black pepper to taste, stirring gently.
  11. Serve hot, drizzled with a little olive oil on top.
