Cook-up rice recipe
A flavorful one-pot rice dish with meat and spices.
Ingredients
- 400 g rice
- 500 g chicken
- 1 unit onion
- 1 unit bell pepper
- 1 unit carrot
- 3 tsp garlic
- 1 tbsp thyme
- 400 ml coconut milk
- 600 ml water
- 1 tsp salt
- 1 tsp black pepper
How to make Cook-up rice
- Rinse 300 g of rice under cold water until the water runs clear, then drain it well.
- Chop 1 onion, 1 bell pepper, and 1 carrot into small pieces before starting.
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Sauté the chopped onion, bell pepper, and carrot until softened, about 5 minutes.
- Add 2 minced garlic cloves and 400 g of chicken pieces, cooking until browned, about 8 minutes.
- Stir in the rinsed rice, 1 teaspoon of thyme, 400 ml of coconut milk, and 250 ml of water.
- Season with 1 teaspoon of salt and 1 teaspoon of black pepper, mixing well.
- Bring the mixture to a boil over high heat, then reduce the heat to low.
- Cover the pot and simmer for 25-30 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork to separate the grains before serving hot.
