How to make Metemgee

  1. Peel and chop 400 g of cassava, 200 g of sweet potato, and 2 plantains into bite-sized pieces.
  2. Before starting, chop 1 onion and mince 2 garlic cloves for the recipe.
  3. In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
  4. Sauté the chopped onion and minced garlic until fragrant, about 5 minutes.
  5. Add the chopped cassava, sweet potato, and plantains to the pot, stirring for 2-3 minutes to combine.
  6. Pour in 400 ml of coconut milk, adding 1 teaspoon of thyme, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  7. Stir the mixture well to combine all ingredients evenly.
  8. Cover the pot and simmer on low heat for about 30 minutes until the vegetables are tender.
  9. Check for seasoning and adjust if needed before serving hot.
  10. Serve the metemgee in bowls and enjoy your meal.
