Metemgee recipe
A hearty and comforting one-pot dish from Guyana.
Ingredients
- 500 g cassava
- 300 g sweet potato
- 2 unit plantain
- 400 ml coconut milk
- 1 unit onion
- 3 unit garlic
- 1 tbsp thyme
- 1 tsp salt
- 1 tsp pepper
How to make Metemgee
- Peel and chop 400 g of cassava, 200 g of sweet potato, and 2 plantains into bite-sized pieces.
- Before starting, chop 1 onion and mince 2 garlic cloves for the recipe.
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Sauté the chopped onion and minced garlic until fragrant, about 5 minutes.
- Add the chopped cassava, sweet potato, and plantains to the pot, stirring for 2-3 minutes to combine.
- Pour in 400 ml of coconut milk, adding 1 teaspoon of thyme, 1 teaspoon of salt, and 1 teaspoon of black pepper.
- Stir the mixture well to combine all ingredients evenly.
- Cover the pot and simmer on low heat for about 30 minutes until the vegetables are tender.
- Check for seasoning and adjust if needed before serving hot.
- Serve the metemgee in bowls and enjoy your meal.
