How to make Sopa de caracol

  1. Chop 1 onion, 1 bell pepper, and 3 garlic cloves finely. Set them aside for later use in the recipe.
  2. In a pot, heat 2 tablespoons of oil over medium heat. Sauté the chopped onion until softened, about 3 minutes.
  3. Add the chopped bell pepper and garlic to the pot. Continue to sauté for another 2 minutes until fragrant.
  4. Stir in 500 g of conch meat to the pot and cook until opaque, about 5 minutes.
  5. Pour in 4 cups of chicken broth and 1 can of coconut milk. Gently simmer the mixture for 20 minutes, stirring occasionally.
  6. Add the juice of 1 lime, 1/2 cup of chopped cilantro, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot.
  7. Stir well to combine all ingredients and let simmer for another 5 minutes for flavors to meld.
  8. Serve the hot soup in bowls with a dash of hot sauce for added heat. Garnish with extra cilantro if desired.
