Sopa de caracol recipe
A savory Honduran conch soup bursting with flavor!
Ingredients
- 500 g conch meat
- 400 ml coconut milk
- 500 ml chicken broth
- 1 unit onion
- 1 unit bell pepper
- 3 unit garlic
- 30 g cilantro
- 2 unit lime
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp hot sauce
How to make Sopa de caracol
- Chop 1 onion, 1 bell pepper, and 3 garlic cloves finely. Set them aside for later use in the recipe.
- In a pot, heat 2 tablespoons of oil over medium heat. Sauté the chopped onion until softened, about 3 minutes.
- Add the chopped bell pepper and garlic to the pot. Continue to sauté for another 2 minutes until fragrant.
- Stir in 500 g of conch meat to the pot and cook until opaque, about 5 minutes.
- Pour in 4 cups of chicken broth and 1 can of coconut milk. Gently simmer the mixture for 20 minutes, stirring occasionally.
- Add the juice of 1 lime, 1/2 cup of chopped cilantro, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot.
- Stir well to combine all ingredients and let simmer for another 5 minutes for flavors to meld.
- Serve the hot soup in bowls with a dash of hot sauce for added heat. Garnish with extra cilantro if desired.
