How to make Griot

  1. Cut 1 kg of pork shoulder into 2-inch cubes and set them aside on a plate.
  2. In a mixing bowl, combine the pork cubes with 200 ml of lime juice, 4 minced garlic cloves, and 1 chopped onion.
  3. Finely chop 1 scotch bonnet pepper and add it to the bowl, along with 1 teaspoon of thyme, 1 teaspoon of black pepper, and 1 teaspoon of salt.
  4. Mix the ingredients thoroughly, then let the pork marinate for at least 2 hours in the refrigerator.
  5. Heat 500 ml of oil in a large pot over medium heat until shimmering but not smoking.
  6. Fry the marinated pork cubes for about 10 minutes, turning them occasionally until golden brown on the outside.
  7. Add 1 chopped green bell pepper to the pot and cook together for an additional 10 minutes, stirring occasionally.
  8. Remove the pot from heat and let the dish rest for a few minutes before serving hot.
