Boxty recipe
Delicious Irish potato pancakes, crispy and warm.
Ingredients
- 500 g potatoes
- 250 ml buttermilk
- 100 g plain flour
- 1 tsp baking powder
- 1 tsp salt
- 50 g butter
How to make Boxty
- Peel and grate 500 g of potatoes into a large bowl.
- Measure and pour 250 ml of buttermilk into the bowl with potatoes.
- Add 200 g of plain flour to the potato and buttermilk mixture.
- Incorporate 1 tsp baking powder and 0.5 tsp salt into the mixture.
- Mix all ingredients until well combined and uniform in texture.
- Heat a frying pan over medium heat and add 50 g of butter until melted.
- Spoon approximately 100 g of the potato mixture into the frying pan, shaping it into a pancake.
- Cook each pancake for 4 to 5 minutes, flipping once, until both sides are golden brown and crispy.
- Transfer the cooked boxty to a plate and keep warm while cooking the remaining pancakes.
- Serve the boxty hot with your choice of toppings.
