How to make Colcannon

  1. Peel and chop 1 kg of potatoes into evenly sized pieces for boiling.
  2. Place the chopped potatoes in a pot and cover with salted water.
  3. Bring the water to a boil and cook the potatoes until tender, about 15 minutes.
  4. While the potatoes are boiling, finely chop 200 g of cabbage and 100 g of green onions.
  5. In a large pan, heat 30 g of butter over medium heat until melted.
  6. Add the chopped cabbage and green onions, and sauté for 5 minutes until softened.
  7. Once the potatoes are tender, drain them and place them back in the pot.
  8. Mash the drained potatoes with 50 ml of milk, 30 g of butter, and 0.5 tsp salt until smooth.
  9. Fold in the sautéed cabbage and green onions, mixing until evenly distributed.
  10. Season the mixture with 0.25 tsp black pepper to taste.
  11. Serve the colcannon warm, optionally garnished with an additional pat of butter.
